Recipe for Peanut Butter Cookies Sealed With a Kiss (Peanut Butter Blossoms)

Ingredients
  

  • 1/2 cup vegetable shortening
  • 1/2 cup peanut butter I used smooth
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar firmly packed
  • 1 egg
  • 1 teaspoon vanilla
  • 1 + 1/3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup additional granulated sugar
  • 3 dozen chocolate kisses unwrapped

Method
 

  1. Beat shortening, peanut butter, 1/2 cup granulated sugar & brown sugar with an electric mixer until creamy
  2. Beat in egg and vanilla
  3. In another bowl, mix flour and baking soda
  4. Gradually add flour mixture to peanut butter mixture and blend thoroughly
  5. Roll dough into 1 inch balls, then roll in the remaining sugar to coat (I poured the sugar onto a plate and rolled the dough balls in it)
  6. Place cookies 2 inches a part on a greased cookie sheet or parchment lined baking sheet
  7. Bake in a 350 degree oven for 10 minutes
  8. Remove the cookie sheet and quickly press a kiss into each cookie
  9. Return cookie sheet to the oven for 3-5 minutes more
  10. Bake until lightly browned
  11. Transfer to cooling racks

Notes

These are best enjoyed within a few hours after baking - after that, the kisses will become a little bit hard again and it's a slightly pointier cookie.
