Method
- Beat shortening, peanut butter, 1/2 cup granulated sugar & brown sugar with an electric mixer until creamy
- Beat in egg and vanilla
- In another bowl, mix flour and baking soda
- Gradually add flour mixture to peanut butter mixture and blend thoroughly
- Roll dough into 1 inch balls, then roll in the remaining sugar to coat (I poured the sugar onto a plate and rolled the dough balls in it)
- Place cookies 2 inches a part on a greased cookie sheet or parchment lined baking sheet
- Bake in a 350 degree oven for 10 minutes
- Remove the cookie sheet and quickly press a kiss into each cookie
- Return cookie sheet to the oven for 3-5 minutes more
- Bake until lightly browned
- Transfer to cooling racks
Notes
These are best enjoyed within a few hours after baking - after that, the kisses will become a little bit hard again and it's a slightly pointier cookie.
