Mix 1 cup of pureed pumpkin, 1 cup of unsweetened almond milk (or any milk of your choice), 2 tsp pumpkin pie spice, 1 scoop of vanilla protein powder and 1/2 banana (sliced and frozen) in a blender.
You can add a splash more milk or a few more sliced pieces of frozen banana to control the consistency. Mix until thick and creamy.
Pour into a large bowl (or two small bowls).
Place in the freezer to firm up for a few minutes - I let mine sit in the freezer while I chop up the fruit toppings.
Top with blackberries and peeled dragon fruit (or any toppings of your choice!)
Sprinkle on some unsweetened shredded coconut and chia seeds for even more contrast and texture.
