Easy Broccoli & Feta Frittata Recipe

Ingredients
  

  • 1 tbsp butter I used unsalted
  • 1/2 onion finely diced
  • 6 eggs
  • 1 cup feta cut into small pieces
  • 3.5 cups broccoli washed and chopped
  • Salt and pepper to taste

Method
 

  1. Melt butter over medium heat in an oven proof pan (ex: cast iron)
  2. Add the onion and cook until the onion is a bit glossy (3-5 minutes)
  3. Add the chopped broccoli to the pan
  4. Season with salt and pepper, stirring gently
  5. Whisk eggs in a bowl and pour over the onion and broccoli
  6. The eggs will begin to set quickly
  7. Toss on the felt and do not stir
  8. Cook on medium heat, until the eggs are firm on the bottom (4-6 minutes)
  9. Gently lift with a spatula to take a peek
  10. Turn broiler on to high
  11. Place pan under broiler briefly (approx. 2 minutes)
  12. Watch carefully because the eggs will brown very quickly!
